Watermelon Cake – Gluten Free, Vegan

This week’s ‪#‎GBBO recipe is this delicious healthy alternative to fruit cake, but with a difference. This recipe isn’t technically a cake, it’s a watermelon, but it’s totally delicious and looks amazing too. It’s so simple to make, with no baking involved whatsoever and would look fantastic at any party!

Healthy watermelon fruit cake recipe from MyNutriCounter

Ingredients:

1 watermelon
1.5 cups/325g tub Greek yoghurt
3/4 cup/60g flaked almonds
3/4 cup/60g shredded coconut
1 punnet fresh strawberries
1 punnet fresh blackberries
1 punnet fresh blueberries
1 tbsp. honey

Method:

1. Lightly toast the coconut and almonds in a pan (on medium heat) until lightly browned then add the honey and mix. Set aside and leave to cool.
2. Slice the top and bottom from the watermelon then cut the middle section out.
3. Coat the sides of the watermelon with greek yoghurt and roll in the coconut and almonds.
4. Coat the top of the watermelon with greek yoghurt and decorate with the fresh berries.
5. Add fresh strawberries to the edge of the cake.
