It’s National Fritters Day and to celebrate we’ve made these super healthy and delicious sweet potato and courgette/zucchini fritters. They’re so easy to make and taste fantastic.

They make the perfect healthy starter, but could also be served with salad to make a tasty light lunch.

Whatever way you choose to serve them, you won’t be disappointed 🙂

Ingredients:

50g/2oz coconut oil, melted
1 egg
1 medium sweet potato, peeled and grated
1 medium courgette/zucchini , grated
1 tsp. mixed herbs
1 tsp. black pepper
2 tbsp. ground almonds

Method:

  1. Preheat the oven to 200C/390F and line a baking tray with parchment paper.
  2. In a bowl mix together the egg, coconut oil, pepper and mixed herbs until combined.
  3. Add in the ground almonds, sweet potato and courgette then mix well.
  4. Divide the mixture into balls (it should be quite soggy) then flatten each ball onto the baking tray.
  5. Bake in the oven for 30-40 minutes, turning half way through.
  6. Remove the fritters from the oven once browned then serve.
