Salmon & Pesto
This dish is packed with nutrition and ready in under 30 minutes! It’s one of our favourite quick and easy meals as we absolutely love salmon. We especially like it roasted whilst the pesto helps to keep the fish moist and adds to the delicious flavour. It’s the perfect simple recipe for a healthy and nutritious lunch or dinner. We sometimes serve it with a side of cauliflower rice.

Ingredients:
2 salmon filets
1 lemon
2 tbsp. basil pesto
2 tomatoes
1 punnet tenderstem broccoli
Method:
1. Preheat the oven to 200C/390F.
2. Lay the salmon fillets skin side down on a piece of tin foil and drizzle with lemon juice.
3. Spread the pesto on top of each fillet and add slices of chopped tomato. Pull the foil edges together to completely wrap the salmon.
4. Put the salmon parcels on a baking tray and bake for 20 mins.
5. Meanwhile place the broccoli in a pan of boiling water for approximately 6 mins or until it softens to your preference.
6. Plate up and enjoy!
