Winter Vegetable Soup – Gluten Free, Vegan
This healthy and delicious winter vegetable soup is sure to tickle your tastebuds this festive season. It’s packed with nutrition and tastes amazing.
I’ve made my own vegetable broth for this recipe, it’s super easy to do and a great way of using up vegetables. You can find the simple recipe here and use it for any vegetable based soup.
Not only is this recipe fuss-free, it’s also great for freezing too – ideal for days when you don’t have the time to cook. I usually make a large pot and freeze for a healthy and flavoursome lunch.
Serves 6
Ingredients:
2 sweet potatoes, diced
3 carrots, diced
1 onion, chopped
2 celery sticks, chopped
3 cloves of garlic, crushed
1 x 400g can chopped tomatoes
½ cup/85g white quinoa
1 cup/65g kale
700ml vegetable broth
1 tsp. rosemary
1 tsp. thyme
Fresh oregano
Pinch of black pepper
1 tbsp. coconut oil
Method:
- Heat the coconut oil in a pan and gently fry the onion and celery sticks until soft (approx. 5-6 mins).
- Add the chopped tomatoes, garlic, sweet potato, carrots, vegetable broth, rosemary, thyme and chopped coriander, bring to the boil then leave to simmer for 20 mins.
- Add in the quinoa and leave for a further 20 mins.
- Add in the kale and leave until wilted (approx. 5 mins).
- Serve with a sprinkle of black pepper.
