We just love custard, and with this recipe, there really is no excuse not to make your own. It’s super easy, quick, healthy and absolutely delicious.

We made this to accompany my healthy berry crumble, but love it that much that we could eat it on it’s own. It’s sweet, creamy, light and tastes so good you’ll struggle to believe it’s healthy.

A couple more recipes that you could add it to are the sticky toffee cake and the jam tarts!

Ingredients:

1 x 400ml/13.5fl oz can coconut milk
2 tbsp. honey or maple syrup
1 vanilla pod
6 egg yolks

Method:

  1. Beat all the egg yolks in a bowl.
  2. Add the milk honey/maple syrup and vanilla to a saucepan and heat gently over a medium heat until warm, but not boiling.
  3. Add the beaten egg yolks to the pan and stir continuously until everything is combined.
  4. Turn down to a low heat for another 15 minutes until thickened, whisking occasionally.
