Valentine’s Chocolate Biscuits

What better way to share Valentine’s day with your loved one, than with some deliciously chocolatey heart-shaped biscuits. A little gesture like this can go a long way to setting a romantic mood for the day. Even if you don’t want to set a romantic mood, they taste delicious so they’re still worth making just for the taste 🙂

Healthy valentines biscuit recipe from MyNutriCounter

Ingredients:

For the biscuits: 

1 tbsp. coconut oil, melted
8 tbsp. cashew nut butter
¼ tsp. bicarbonate of soda
1/2 tsp. ground cinnamon
1 tsp. vanilla extract
2 tbsp. maple syrup
2/3 cup/100g ground almonds

For the chocolate topping:

5 tbsp. coconut oil
3 tbsp. cacao powder
6 tbsp. maple syrup
2 tbsp. cashew butter

Optional: desiccated coconut to top

Method:

1. Preheat the oven to 160C.
2. Combine the coconut oil, cashew nut butter, maple syrup, bicarbonate of soda, vanilla extract and cinnamon in a large bowl. When fully combined, add the ground almonds by folding them into the mixture.
3. Line a baking tray with parchment paper and scoop out approximately 1 tbsp. of the mixture at a time (it will be really sticky). Roll into balls, then flatten into round cookies.
4. Bake for 20-25 minutes, then leave out to cool while you make the topping.
5. To make the topping – add all the ingredients to a pan and heat on a medium/low heat, mixing well until melted.
6. Use the heart-shaped cutters, then decorate the biscuits with the chocolate and add a sprinkle of desiccated coconut to serve.
