Turmeric Cauliflower Rice with Pistachios – Low Calorie, Gluten Free, Paleo
I absolutely love cauliflower rice, it’s the perfect healthy and nutritious accompaniment to curry, so I wanted to experiment with flavours to come up with a cauliflower rice dish that’s a little bit different. This turmeric and pistachio option is amazing. The turmeric adds a fantastic kick to the flavour and the pistachios add crunch. It really does taste fantastic. I served it with my sweet potato, lentil and chickpea dhal and it went down a treat.
If you’ve never tried cauliflower rice before, it’s such an amazing, delicious and healthy alternative to rice. I hope you love it as much as I do 
Ingredients:
1 cauliflower
5/8 cup/150ml coconut milk
3 tbsp. pistachios
1 tsp. turmeric
1 tsp. coconut oil
Method:
1. Chop the cauliflower and pulse in a food processor (or grate) until you get a rice like consistency.
2. Heat the coconut oil in a frying pan and gently fry the pistachios for 2 mins.
3. Add the processed cauliflower and turmeric then mix. After this add the coconut milk. Gently fry for 3-4 mins.
