Sweet Potato & Coconut Soup

This delicious sweet potato soup recipe makes a fantastic healthy lunch or starter. It’s super quick and easy to make and tastes sublime.

 When making this soup I decided not to peel the sweet potatoes as there’s so much nutrition in the skin, however if you prefer you can peel yours.

This recipe also calls for vegetable broth, you can find a great easy recipe for that here or alternatively use some vegetable bouillon.

Ingredients:

4 x sweet potatoes
1 x 400ml can coconut milk
700ml vegetable broth
1/2 onion
2 cloves garlic, crushed
2 tbsp. nutritional yeast
1 tbsp. chilli flakes
2 tbsp. cinnamon
2 tbsp. paprika
1 tsp. grated ginger

Optional: fresh coriander and chopped brazil nuts to serve

Method:

1. Chop the sweet potatoes into small chunks and place in a pan of water. Bring to the boil, then simmer for about 20 minutes (until softened).
2. Meanwhile add the onion, ginger and garlic to a frying pan and gently fry until softened.
3. Drain the sweet potato and allow to cool slightly, then add to a blender along with all the other ingredients. Blend until smooth and creamy.
4. Reheat, then serve.
