Sweet Potato Cauliflower Mash
This would have to be our favourite mash of all time. We absolutely love it, it’s so comforting and tastes great as a side to any meal.
The coconut milk and yoghurt adds richness to the dish, while the nutmeg, cinnamon and ginger help deepen the natural sweetness of it. As there’s no butter in the ingredients, it’s best to get coconut milk without emulsifiers (guar gum, carrageenan, methyl cellulose, corn starch, sodium or potassium metabisulfate) as these are chemical additives which cause the fatty and watery layers to stop separating from one another, so you won’t be able to achieve the thick creamy consistency. The brand we use is Rhythm, it comes in a packet not a tin and you can find it in Holland and Barrett.

Ingredients:
1 cauliflower
4 sweet potatoes
1 tsp. coconut oil
1 onion
200g/7oz shredded kale, raw
4 cloves garlic
1 tbsp. Greek yoghurt
1 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
100-150ml/3.5-5fl oz coconut milk
Method:
- Chop the cauliflower and peel and chop the sweet potatoes, place in a pan of boiling water. Boil until tender (15 minutes)
- Heat the coconut oil in a sauce pan, then add the chopped onion and heat on a medium heat for 10 mins (until browned). Add the kale to the pan and leave for another 2-3 minutes.
- Drain the cauliflower and sweet potatoes, then add to a large bowl and mash with the garlic, Greek yoghurt, ginger, nutmeg, cinnamon and coconut milk (add the coconut milk a bit at a time until you reach the right consistency). Stir in the kale and onions.
