Steak with Sweet Potato/Parsnip Fries and Onion Relish

This steak, sweet potato and parsnip fries recipe puts a healthy spin on a dish everyone loves, and it’s so easy to make too. This really is a great meal to make for family and friends as it’s super simple and tastes delicious.

Drizzling the sweet potato and parsnips with honey adds a sweet taste to the fries and the paprika gives a gentle spice. Hope you like it!

Serves 2.

Ingredients:

2 sweet potatoes
4 parsnips
1 tbsp. paprika
1 tbsp. mixed herbs
1 red onion
1 tsp. coconut oil
2 thyme sprigs
2 sirloin steak fillets
1 tbsp. cider vinegar
2 tbsp. honey

Method:

1. Preheat the oven to 220C/430F.
2. Chop the sweet potatoes and parsnips into slices and place on a baking tray. Drizzle with honey, paprika and mixed herbs and bake for 15 mins.
3. Meanwhile start making the onion relish – slice the onion and add to a pan with the coconut oil along with the thyme sprigs, heat on a high heat for 10 minutes (until browned).
4. Fry the steak fillets for 3 mins on each side (for medium rare).
5. Return to the onions, add the cider vinegar and a tbsp of honey then mix well.
6. Plate up and enjoy!
