Healthy Smoked Salmon Salad
This delicious salmon salad recipe is super simple, really refreshing and totally delicious. It makes a fantastic easy lunch or side dish and you can even prepare it the night before and take as a grab and go lunch.
For this recipe you can use fresh lemon juice instead of adding a dressing or I have a great salad dressing recipe that complements the flavours perfectly.

Serves 2.
Ingredients:
1/2 cup/90g smoked salmon
4 slices cucumber
2tsp. pumpkin seeds
Juice from 1 lemon
1/2 carrot
8 physalis
1 beetroot
2 cups/100g baby red leaf, spinach, rocket, red chard
Method:
- Grate the carrot.
- Slice the cucumber lengthways with a potato peeler.
- Slice the smoked salmon.
- Add all the ingredients to a plate and serve with fresh lemon juice or my sesame salad dressing.
