Smoked Salmon and Egg Stuffed Avocado

When scooping out the holes, do this bit by bit with a small spoon and only scoop out just enough to fit in the eggs.

Ingredients:

1 avocado
Small strips of smoked salmon
2 eggs
1 tsp. chili flakes
Fresh dill to serve

Method:

  1. Preheat the oven to 220C/430F.
  2. Chop the avocado in half and remove the seed.
  3. Scoop out a little bit more of the avocado holes with a small teaspoon (not too much - just enough to hold an egg.
  4. Place on a baking tray and add small strips of smoked salmon to the holes.
  5. Crack the eggs into a small bowl, then spoon the yolks and however much white the avocado will hold on top of the salmon strips.
  6. Bake for 15-20 minutes.
  7. Sprinkle chilli flakes and fresh dill on top to serve.
