Simple Salmon & Cucumber Salad
This simple supper recipe is ready in 20 minutes, super easy, healthy and delicious. It’s a perfect recipe for when you don’t have much time.
Salmon is rich in omega 3, so it’s great for your skin, brain and eyes. To top it off, salmon is a good source of tryptophan which should help you sleep better. What’s not to love?
We typically fry the salmon in coconut oil, as it cooks quickly and tastes delicious, but if you prefer you could bake it for 20-30 minutes in the oven.
This really is a wonderfully simple dish that’s filled with an amazing array of fresh flavours that come together perfectly to create something really delicious.

Serves 2.
Ingredients:
190g/6.5oz Greek yoghurt
Juice from 1 lemon
2 tsp. paprika
2 salmon fillets
1 cucumber
1 tbsp. sesame seeds
Chopped tomatoes
Chopped red pepper
1 tsp. apple cider vinegar
Chopped fresh parsley
Method:
1. Mix together the Greek yoghurt, lemon juice and paprika, then marinate the salmon fillets in it and place in the fridge for 10-15 mins.
2. Using a peeler, slice the cucumber and place on a place with the sesame seeds sprinkled on top.
3. Mix together the tomatoes, pepper, apple cider vinegar and parsley, after this add them to the plate with the cucumber.
4. Fry the salmon fillets on a high heat for 3-4 mins each side (start with the skin side down) then plate up and serve.
