Raspberry Mousse
One of our most popular recipes on the blog is the delicious cacao mousse, which inspired me to create this healthy raspberry dessert. It contains avocado, which as with the cacao mousse gives the dessert a smooth and creamy texture but you don’t really taste it at all. I’ve also added a bit of creamed coconut to this mousse which adds to the deliciousness of the recipe.
The best part about this recipe is it’s so easy to make (it only takes 5 minutes, yet it’s really impressive).

Serves 2.
Ingredients:
1/2 cup/100g creamed coconut
1 avocado
2 3/4 cups/350g raspberries
2 tbsp. cashew butter
2 tsp. honey/maple syrup
Method:
- Add all the ingredients to a food processor and pulse until a thick, smooth and creamy texture is reached.

Can you make it with something instead of the creamed coconut. Hubby hates coconut.

I’ve never tried it without the creamed coconut but you could try replacing it with another avocado – you should then still achieve the same creamy texture. Let us know if you try it! π
