Quinoa Pudding

This delicious quinoa pudding is super easy to make and tastes fantastic. It has a similar taste to rice pudding, but is really healthy and nutritious.
 
We’ve added berries into ours to cook with the quinoa, although it tastes great without them too. We prefer to eat this warm, but it can also be refrigerated and served cold. Hope you enjoy! 🙂

Ingredients:

250ml/8.5fl oz almond milk
1 tbsp. vanilla extract
65g/2.5oz honey
1 tsp. cinnamon
200g/7oz quinoa
Handful of fresh berries
Optional toppings: berries, cinnamon and honey

Method:

1. Mix together the milk, vanilla, honey and cinnamon in a saucepan and bring to the boil.
2. Rinse the quinoa, then add to the pan along with half of the berries and reduce the heat to a simmer.
3. Leave to cook for 30 minutes (until thickened) stirring occasionally.
4. Top with more berries, a dash of cinnamon and more honey.
