Polenta With Mixed Vegetables

There’s nothing quite like a dish of piping hot polenta with mixed vegetables to warm you up. It’s flavoursome, filling and full of nutrition which makes it a fantastic option when you want to rustle something up quickly. Another added bonus is that it’s inexpensive to buy.

This dish is perfect when you don’t have much time on your hands but you want to get that much needed daily nutrition.

Ingredients:

225g/8oz polenta
910ml/31fl oz water
1/2 red onion
Handful of mushrooms
1/2 x 400g/14oz can chickpeas
1 tsp. mixed herbs
1 tsp. paprika

Optional topping - pesto

Method:

1.Heat the oil in a skillet over medium-high heat.
2. Add the chickpeas to the skillet and sauté, keep stirring frequently, until golden and crispy. This should take approximately 10–15 minutes.
3. Meanwhile fry the mushrooms and onion in a separate pan.
4. Add water to a pan and boil.
5. Once boiled add the polenta and stir well.
6. Once ready, transfer the chickpeas to paper towels to drain.
7. Place the chickpeas in a medium bowl and sprinkle with paprika and the mixed herbs.
8. Plate everything up and get ready to feel content!
