This delicious pea and mint omelette is super easy to make, tastes delicious and makes a perfect healthy and nutritious breakfast or lunch, in no time at all.

We’ve added nutritional yeast to the omelette as it gives a really cheesy flavour and tastes delicious – it’s a great healthy alternative to cheese.

Ingredients:

3 eggs
1 tbsp. nutritional yeast
1 tbsp. fresh mint, finely chopped
Zest from 1 lemon
splash of almond milk
Handful frozen peas
1 tsp. coconut oil
1 tsp. ground pepper

Method:

  1. Add the frozen peas to a pan of boiling water and boil for 2 minutes.
  2. Add the coconut oil to a frying pan to heat and whisk together the eggs, pepper and milk then add to the frying pan. Move the eggs around the frying pan to spread them out evenly.
  3. When the omelette begins to cook, but still has a bit of raw egg on top add in the peas, lemon zest, mint and nutritional yeast.
  4. Once the omelette is ready slide a spatula underneath it and roll up, then slide on to a plate.
  5. Garnish the top of the omelette with more mint, lemon zest and nutritional yeast to serve.
  6. Enjoy! :)
