We’ve added nutritional yeast to the omelette as it gives a really cheesy flavour and tastes delicious – it’s a great healthy alternative to cheese.

Ingredients:
3 eggs
1 tbsp. nutritional yeast
1 tbsp. fresh mint, finely chopped
Zest from 1 lemon
splash of almond milk
Handful frozen peas
1 tsp. coconut oil
1 tsp. ground pepper
Method:
- Add the frozen peas to a pan of boiling water and boil for 2 minutes.
- Add the coconut oil to a frying pan to heat and whisk together the eggs, pepper and milk then add to the frying pan. Move the eggs around the frying pan to spread them out evenly.
- When the omelette begins to cook, but still has a bit of raw egg on top add in the peas, lemon zest, mint and nutritional yeast.
- Once the omelette is ready slide a spatula underneath it and roll up, then slide on to a plate.
- Garnish the top of the omelette with more mint, lemon zest and nutritional yeast to serve.
