Oat Energy Balls
These protein packed mini energy balls make a perfect grab and go snack. They’re really easy to make and such a convenient healthy breakfast or snack.
You can substitute the cranberries for raisins and add any type of seeds you like and they’ll still taste great. Store in an air tight container, in the fridge for up to 1 week.
Enjoy 
Ingredients:
1 cup/90g gluten free oats
⅓ cups/30g flaked almonds
⅓ cup/20g shredded coconut
½ cup/125g cashew nut butter
¼ cup/85g honey
1 tbsp. chia seeds
⅓ cup dried/40g cranberries
3 tbsp. pumpkin seeds
Method:
- Preheat the oven to 175C.
- Bake the oats, almonds and coconut for 8-10 minutes, stirring after 5 minutes then leave to cool.
- Place the cashew nut butter in a bowl and microwave for 20-30 seconds.
- Mix the baked ingredients with the cashew nut butter and add the chia seeds, pumpkin seeds, cranberries and honey.
- Roll into small balls and enjoy!
