Healthy Sweet Potato Pancakes

These healthy sweet potato pancakes are so tasty and really easy to make. You can make them using only 2 ingredients (I’ve added a tablespoon of almond butter to mine – but this is optional, I’ve had the pancakes without this aswell and they still taste delicious).

They make the perfect healthy breakfast or dessert. Hope you enjoy! 🙂

Healthy Sweet Potato Pancakes by MyNutriCounter

Makes 3 Pancakes

Ingredients:

1 large sweet potato
2 eggs
1 tbsp. almond butter (optional)

Method:

  1. Pierce the sweet potato several times with a fork then bake for 6 minutes in the microwave.
  2. Cut the potato in half then scrape out all the inside and mash in a large bowl.
  3. Add the eggs and almond butter to the bowl then mix well with an electric whisk.
  4. Gently fry the mixture in a frying pan for 2-3 mins each side.
  5. Plate up and serve with your choice of toppings. I’ve gone for Greek yoghurt, berries and honey!
