Ingredients:
For the pastry:
200g/7oz ground almonds
100g/3.5oz gluten free oats (or around 100g/3.5oz ground almonds)
50g/2oz coconut oil
1 egg
1 tbsp. vanilla extract
1 tbsp. honey
For the filling:
Juice and zest from 1 orange
135g/5oz raisins
110g/4oz dried cranberries
1 tsp. vanilla extract
1 tsp. cinnamon
1 tsp. ground nutmeg
Optional: Desiccated coconut to serve.
Method:
- Preheat the oven to 160C/320F.
- Combine all the ingredients for the pastry in a large bowl and mix well then set aside.
- Add all the ingredients for the filling to a saucepan and leave to simmer on a low heat for 20-30 minutes.
- Grease 8 cupcake tins with coconut oil then press in the pastry mixture. Push the mixture to the bottom of each tin then up the sides. The pastry should be about ½ cm thick.
- Add to the oven and bake for 10 minutes.
- Roll out the leftover pastry and make your toppings from cutters or cut them out by hand in the shape of holly or Christmas stars.
- Remove the pastry from the oven and add a spoonful of the mince pie filling to each of the pastry cases then top with your stars or holly.
- Bake for 30 minutes then sprinkle with desiccated coconut to serve.
