Healthy Cauliflower Soup

This delicious cauliflower soup is super healthy, easy to make and great for a simple lunch or starter.

This recipe calls for vegetable broth and we have a great recipe for that here, but if you don’t have time you can always use vegetable bouillon.

As with all our recipes, this has been created to taste fantastic whilst containing a good amount of nutrition to feed and nourish the body.This particular recipe is particularly high in vitamin A and vitamin C but has a good balance of other nutrients including fibre, iron, calcium and folate.

Ingredients:

1 cauliflower, finely chopped
1 onion, finely sliced,
2 sweet potatoes, chopped
400ml/13.5fl oz vegetable broth
400ml/13.5fl oz almond milk
1 tbsp. coconut oil

Optional: Pumpkin seeds to top

Method:

  1. Heat the coconut oil in a saucepan then gently fry the onion until softened (approx 5 mins).
  2. Add the vegetable stock, sweet potato and cauliflower to the pan. Bring to the boil then simmer for 20 minutes (until the potato has softened).
  3. Add the almond milk and stir.
  4. Leave to cool then add to a blender and blend until a smooth but thick consistency.
  5. Re-heat then serve with your choice of toppings.
