Gluten-Free Courgette (Zucchini) Pizza
One of our favourite healthy alternatives is a pizza made with a courgette (zucchini) base. This particular recipe is perfect for the veggie lovers. You could also try the cauliflower pizza if you’re not a fan of courgette (zucchini), but we recommend you sample this taste sensation!
The benefits you’ll see from swapping a normal pizza for this, is you’ll replace the empty nutritional calories of the dough and consume lots of nutrition including vitamin C, vitamin B-6, potassium and more instead. You will not sacrifice on flavour and you’ll feel satisfied for longer. Winning all round!

Ingredients:
For the base:
2 courgettes/zucchinis
100g/3.5oz of ground almonds
1 egg
1 tsp. mixed herbs
Optional toppings:
200g/7oz chopped tomatoes
1 tbsp. tomato purée
Sliced mushrooms
Piccolino tomatoes
1/2 avocado
Red onion
Fresh parsley
Method:
1) Preheat the oven to 200C/390F.
2) Grate the courgettes/zucchinis, then place in the microwave for 5-6 minutes on high.
3) Place on a tea towel and leave to cool.
4) Once cooled, wrap the tea towel with the courgette/zucchini inside and squeeze out all the excess water.
5) Add to a bowl and then mix in the remaining base ingredients, compress and finally flatten onto a baking tray.
6) Bake in the oven for 15 minutes.
7) Once the pizza base is in the oven, now it's time to prepare the toppings. Heat the chopped tomatoes and tomato purée in a small sauce pan and cook gently for 8-10 minutes.
8) Remove the base from the oven, spread with tomato sauce and add any other toppings.
9) Return to the oven for 10 minutes.
10) Time to sit back, relax, and enjoy.
