These delicious falafel balls make a super easy and healthy lunch, starter or side that taste great served with my tasty hummus.

Healthy and delicious falafel ball recipe from MyNutriCounter

Makes 18 balls

Ingredients:

3 carrots, grated
3 garlic cloves, crushed
2 X 400g cans chickpeas, drained
Handful fresh parsley, chopped
3 tsp. coriander
2 tsp. cumin

Method:

  1. Preheat the oven to 200C.
  2. Place all the ingredients into a blender or food processor and pulse until smooth.
  3. Divide the mixture into 18 small balls.
  4. Bake for 20 minutes then serve! :)
