Cucumber Avocado Rolls

Ingredients:
1 cucumber
1 avocado
Juice from 1 lime
2 tbsp. nutritional yeast
3 basil leaves
Pinch of black pepper
Sprinkle of smoked paprika to garnish
Method:
- Peel and remove the stone from the avocado. Add all the ingredients (except the cucumber and paprika) to a blender and blend until a smooth consistency is reached.
- Slice the cucumber with a potato peeler and spoon a small amount of the avocado mixture along the slices of cucumber.
- Roll up then garnish with the paprika.
- Enjoy ! :)
