These healthy and delicious cucumber rolls are so simple to make and taste fantastic. They’re stuffed with creamy avocado and are full of nutrition. They’re definitely a crowd pleaser and would be fabulous for a party appetiser – it’s not often you find healthy and delicious party food. The best part about this recipe is that it’s inexpensive to make and only uses a few ingredients.

Ingredients:

1 cucumber
1 avocado
Juice from 1 lime
2 tbsp. nutritional yeast
3 basil leaves
Pinch of black pepper
Sprinkle of smoked paprika to garnish

Method:

  • Peel and remove the stone from the avocado. Add all the ingredients (except the cucumber and paprika) to a blender and blend until a smooth consistency is reached.
  • Slice the cucumber with a potato peeler and spoon a small amount of the avocado mixture along the slices of cucumber.
  • Roll up then garnish with the paprika.
  • Enjoy ! :)
