Couscous & Sweetcorn Fritters
These delicious sweetcorn and couscous fritters make such a fantastic healthy and nutritious snack. They take no time at all to make, so they’re perfect for when you’re in a rush.
If you’ve ever made fritters before, you might be aware that it’s sometimes hard to stop them from falling apart when frying. I find it so much easier to make them as small as possible as they hold together better. I’d recommend using 1 teaspoon of mixture per fritter.

Makes 30.
Ingredients:
2 cups prepared couscous
2/3 cup/115g sweet corn
½ red onion
2 tsp. oregano
2 garlic cloves
2 tbsp. chopped parsley
Coconut or avocado oil for frying.
Method:
- Mix together all the ingredients in a large bowl until well combined.
- Divide into 30 equal parts (approx 1 teaspoon each).
- Heat your oil in a frying pan then fry each fritter for 2 minutes on each side.
- Serve up and enjoy!
