Coconut and Almond Broccoli Rice

Not only is it really nutritious, and an amazing healthy alternative to rice, it also tastes amazing too. The addition of the coconut milk, really gives the rice a delicious flavour and the almonds add a fantastic crunch to the recipe. It’s a taste sensation and the perfect healthy side dish for any day of the week.

Ingredients:
1 broccoli
150ml/5fl oz coconut milk
3 tbsp. almonds
1 tsp. coconut oil
Method:
1. Chop the broccoli and pulse in a food processor (or grate) until you get a rice like consistency.
2. Heat the coconut oil in a frying pan and gently fry the almond flakes for 2 mins.
3. Add the processed broccoli and mix then add the coconut milk. Gently fry for 3-4 mins.
