Cherry and Mango Salmon
This salmon recipe is sweet, nutritious and delicious. You may never have thought of combining fish with fruit but this dish is refreshing, colourful and tastes fantastic.

Ingredients:
For the salmon:
200g/7oz cherries, halved and stoned
2 fresh salmon fillets
3 tbsp. of honey, or low fat syrup made from natural fruit extract
1 tbsp. of orange peel, grated
1/2 tsp. pepper, coarsely ground
1 ripe mango, peeled and chopped
A sprinkle of fresh basil
For the fries:
2 sweet potatoes
2 tsp. smoked paprika
2 tbsp. coconut oil
1 tsp. garlic powder
1 tsp. pepper, coarsely ground
1/2 tsp. cumin
Method:
Method:
- Preheat the oven to 230C/450F.
- Chop the potatoes into thin strips and mix the other ingredients for the fries together in a small bowl.
- Coat the potatoes evenly with the mixture then bake in the oven for 30 minutes.
- Grill the salmon on a medium heat for 20-25 mins, or until the fish flakes easily.
- Meanwhile toss together the cherries, mango and basil with the ground pepper.
- In a separate bowl, grate the orange and mix with the honey or syrup then add more ground pepper.
- Remove the salmon from the oven and glaze with the honey mixture.
- Plate up with the sweet potato fries then add the cherries, mango and basil to serve.
