Cauliflower Mash
For this week’s healthy NutriPic recipe we’ve used cauliflower instead of potato and it sure is a mash hit! It’s such a delicious way to cut calories and add veggies to any meal.
We always add the coconut milk a bit at a time, to get the desired consistency.

Serves 4
Ingredients:
1 cauliflower
2 cloves garlic
100ml/3.5fl oz coconut milk
1 tsp. nutmeg
1 tbsp. Greek yoghurt
Pepper to taste
Method:
1. Chop the cauliflower, then place in a pan of boiling water and boil until tender (10-15 mins).
2. Drain, then add to a large bowl and mash with the garlic and coconut milk (add this a bit at a time until you get to the consistency you like).
3. Stir in the Greek yoghurt, nutmeg and add the pepper to taste.
