Cacao Nut Muffins
These delicious cacao nut muffins make the perfect healthy breakfast or snack. They’re super simple to create and great to make in preparation for the week ahead.
We’ve just added 1 tablespoon of cacao powder to ours to give them just a hint of a chocolate flavour, but feel free to add more if you’d prefer a stronger flavour.
If stored in an air tight container, they should last for up to 1 week.

Ingredients:
500g/17.5oz almond butter
2 bananas
2 tbsp. maple syrup
1 tsp. vanilla extract
1 tsp. cinnamon
1 tbsp. cacao powder
1 tsp. baking powder
2 eggs
Handful chopped nuts
Handful of gluten free oats
Method:
- Preheat the oven to 200C/390F.
- Add all the ingredients (except the nuts and oats) to a blender and blend until smooth.
- Stir in the nuts.
- Add muffin cases to a baking tray and fill each case 3/4 the way to the top with the mixture.
- Sprinkle a few oats on top of each muffin.
- Bake in the oven for 15 mins.
