Ingredients:

225g/8oz buckwheat flour
1 egg
750ml/25.5fl oz water
4 tsp. coconut oil

Method:

  1. Add all the ingredients (except the coconut oil) to a large bowl and mix with a hand mixer until fully combined.
  2. Leave the mixture to stand for at least 15 mins (you can leave overnight and make them ahead if you prefer).
  3. Lightly grease a frying pan with coconut oil and whisk the mixture again before making the tortillas.
  4. Add just enough mixture to the frying pan to cover the bottom (tortillas should be really thin) fry over a medium/high heat for 2 mins each side (or until the tortilla has started to brown).
  5. Set the tortilla to one side then keep making more until the mixture has gone (should make 9 tortillas).

      Thanks for your message.

      When we created the mix it was intended to be used as a tortilla in this recipe http://www.mynutricounter.org/recipe-buckwheat-burritos/ and we continued to play around with both the texture and the flavour until we got to the recipe that you see here.

      We knew the buckwheat would neutralise the flavour and make the consistency a lot thicker too which was our aim. Hence with poetic licence our Buckwheat Tortilla 🙂
