Gluten Free Spiced Baked Fruits

Baked fruits is one of my favourite desserts, it’s super sweet, healthy and really easy to make. For this version I’ve created a sweetly spiced dessert that tastes fantastic on its own, with banana ice cream, custard or on top of pancakes.

A healthy baked fruit dessert from MyNutriCounterServes 2.

Ingredients:

1 apple
1 pear
1/2 cup/50g pineapple chunks
1 nectarine
1 tbsp. pomegranate
1 tbsp. honey
1 tsp. cinnamon
1 tsp. coconut sugar
1 rhubarb
1 tbsp. chopped walnuts
Juice from  1 lemon

Method:

  1. Preheat the oven to 170C.
  2. Chop all the fruit and place in a greased baking tray.
  3. Drizzle the honey on top then sprinkle with cinnamon and coconut sugar. Finish with the squeezed lemon juice.
  4. Place in the oven for 40 minutes then add the walnuts on top and return to the oven for a further 20 minutes.
