Avocado & Coconut Cream Smoothie
This delicious and creamy avocado smoothie makes such a fantastic breakfast or snack. It’s high in fibre, vitamin K, potassium and folate – and has only 166 calories per glass.
We’ve used coconut cream in this recipe, which is the cream from a can of full fat coconut milk that’s been left refrigerated. If you find this recipe too creamy for you, you can also add some of the liquid from the can too.

Ingredients:
1 avocado
1 tsp. vanilla extract
40g/1.5oz spinach
100g/3.5 Greek yoghurt
80g/2.75oz coconut cream
Method:
- Peel, remove the stone and chop the avocado, then add to a blender along with the remaining ingredients. Blitz until smooth and creamy.
