Quinoa & Cashew Bread – Gluten Free, Dairy Free
This week is bread week on Great British Bake Off, which I’ve been so excited about. For most people that begin a journey of healthy eating, bread can be one of the hardest things to give up, so I really wanted to find an amazing alternative. I’ve tried several times to make a good healthy bread but always struggled finding one that’s really simple to make. It’s especially important as it’s a food that most people have as a staple in their everyday diet.
This recipe is super easy, full of goodness and both gluten and dairy free too. I absolutely love it served with coconut oil and fresh strawberries, but it also tastes great with jam too and I have a fantastic healthy recipe for strawberry jam that is unbelievably simple.
Quinoa flakes are quite similar to rolled oats in taste and are often used to make hot cereals. The nutritional benefits of them are incredible. Quinoa is a really high-protein grain, like rice but softer and much higher in fibre. I decided to use them because they taste great, are gluten free and add so many nutritional benefits. I hope you like the recipe as much as I do!
Ingredients:
2 cups/200g of quinoa flakes
3/4 cup/100g of cashews
1/3 cup/60g of chia seeds
1 cup/150g of sunflower seeds (plus 10g extra for the top)
1 1/4 cups/300ml of water
1 tsp. of sea salt
3 tbsp. of melted coconut oil (plus extra for greasing)
1 tbsp. of nutritional yeast
Method:
1. Preheat your oven to 180C.
2. Mix all of the dry ingredients together, then slowly add in your water and oil.
3. Grease a bread baking tin with coconut oil and place the bread in the oven.
4. Cook for 20 minutes.
5. Remove the bread from the tin, then put back in the oven and allow it to cook for another 30 mins.
6. Slice up and enjoy!
