Pasta Bake

This delicious pasta bake recipe is a perfect hearty meal to serve a crowd or a great mid-week quick fix for the whole family. It’s warm, filling and budget friendly too.

As the pasta in this recipe doesn’t need to be boiled first – it will literally take you less than 5 minutes to prepare, so even though it does need an hour baking, it’s really hands off so you can pretty much put it in the oven and leave it.

A delicious pasta bake recipe from MyNutriCounter

Ingredients:

1 x 400g can chopped tomatoes
2 tbsp. tomato puree
1/2 cup/25g sun-dried tomatoes
1 1/2 cups/100g kale
2 cloves garlic, minced
1 tbsp. dried basil
2 tsp. dried oregano
1 tbsp. nutritional yeast
1 1/3 cups/100g mushrooms
1 cup/150g whole wheat pasta
fresh basil for garnish

Method:

  1. Preheat the oven to 190C.
  2. Mix together all the ingredients then add to a baking dish ensuring the pasta is covered completely with sauce.
  3. Cover the baking dish with foil and bake for 40 minutes.
  4. Remove from the oven, uncover and place back in for another 15 minutes.
  5. Sprinkle with a bit more nutritional yeast and garnish with basil then serve.
