Ingredients:

120g/4oz brown rice
1 chicken breast
2 tbsp. coconut oil
1/4 red onion
225g/8oz raw peeled prawns
2 tbsp. tomato purée
1 tbsp. paprika
1/2 punnet cherry tomatoes
Juice from 1 lime
50g/2oz frozen peas
Fresh parsley to garnish

Method:

  1. Cook the rice according to the instructions and set aside.
  2. Chop the chicken breast into small pieces.
  3. Heat the coconut oil in a pan/skillet. Once melted add the onion and stir until the edges have browned.
  4. Add the chopped chicken and prawns.
  5. Once the chicken and prawns are 75% cooked add the cooked rice, tomato purée, paprika and diced cherry tomatoes.
  6. Allow the contents to simmer and gently stir for 3 mins then add the lime juice.
  7. Add the frozen peas and allow to simmer for a further 5 mins, then garnish with the parsley and serve.
