Chicken & Prawn Paella
This week’s NutriPic recipe is this perfect paella. This dish is fantastic for so many reasons; it’s super healthy, nourishing, delicious, it’s ready in under 30 minutes and it’s made in one pan so saves on the washing up.
The juicy chicken breasts and succulent prawns mixed with paprika and lime juice create deep delicious flavours that will make you savour every bite. This is a simple and healthy recipe that’s perfect for an evening with friends which sets the scene for a delicious Mediterranean inspired atmosphere!

Ingredients:
120g/4oz brown rice
1 chicken breast
2 tbsp. coconut oil
1/4 red onion
225g/8oz raw peeled prawns
2 tbsp. tomato purée
1 tbsp. paprika
1/2 punnet cherry tomatoes
Juice from 1 lime
50g/2oz frozen peas
Fresh parsley to garnish
Method:
- Cook the rice according to the instructions and set aside.
- Chop the chicken breast into small pieces.
- Heat the coconut oil in a pan/skillet. Once melted add the onion and stir until the edges have browned.
- Add the chopped chicken and prawns.
- Once the chicken and prawns are 75% cooked add the cooked rice, tomato purée, paprika and diced cherry tomatoes.
- Allow the contents to simmer and gently stir for 3 mins then add the lime juice.
- Add the frozen peas and allow to simmer for a further 5 mins, then garnish with the parsley and serve.
