Healthy Parsnip Soup

This delicious warming parsnip soup makes the perfect healthy and nutritious starter or lunch. It’s really simple to make and is full of goodness.

To make the vegetable broth, I have a great easy recipe here, but alternatively you could use vegetable bouillon.

I’ve served this soup with chopped walnuts, which add a delicious healthy crunch to the dish.

A healthy and delicious parsnip soup recipe from MyNutriCounter

Serves 4.

Ingredients:

2 cups/450g parsnips
1 large carrot
1 onion
1 tbsp. coconut oil
1 tsp. cumin
1 tsp. turmeric
750ml vegetable broth

Method:

1. Heat the coconut oil in a large saucepan then add the onion and carrot and cook over a medium/high heat until softened.
2. Add the parsnips and cook for a further 2 mins.
3. Add the rest of the ingredients, bring to the boil then simmer for 20 minutes.
4. Blend until smooth then serve.
