Chicken & Sweet Potato Curry
This curry is super simple to make and super delicious. I love sweet potato, it’s so tasty and really nourishing too. It adds a fantastic sweet-spicy flavour and creamy texture to the dish.
What I love most about this dish is it has all the classic curry flavours but the addition of sweet potato and coconut milk adds a sweet creaminess. It’s the perfect balance of spicy, savoury and satisfying! I’ve served it here with brown rice, but it also tastes great with my simple cauliflower rice too.
Serves 3.
Ingredients:
1 large sweet potato
1 cup/175g black olives
2 chicken breasts
1 cup/200g lentils
1 can/400ml coconut milk
1 can/400g tinned tomatoes
1 tbsp. turmeric
1 tbsp. cumin
1 tbsp. ground ginger
1 lemon
Method:
1. Preheat the oven to 180C.
2. Cut the chicken breasts and sweet potato into small chunks.
3. Heat the tomatoes, coconut milk, turmeric, ground ginger and cumin in a saucepan until bubbling, then add the chicken, lentils, olives and sweet potato.
4. Mix, then place everything in a baking dish with a lid and put in the oven for approx 1 hour (until the potatoes are soft).
5. Squeeze the lemon juice into the pot then serve either on its own or with brown rice!
