Cauliflower Pizza
This recipe makes us so happy as pizza is our absolute favourite! It’s so nutritious and we actually really prefer it to bread based pizza, it’s surprisingly really filling too.
If you don’t have a food processor, you can easily make the base by grating the cauliflower (it should end up looking just like rice).
We’ve experimented quite a lot with this recipe and the sunflower seeds add a nice crunch to the cauliflower base with the dried oregano adding great flavour too.
We thought the flavour might be lacking for a pizza to be without cheese, however the mashed avocado is a fantastic healthy alternative. I hope you enjoy it!

Ingredients:
For the base:
1 cauliflower
100g/3.5oz sunflower seeds
1 egg, beaten
1 tbsp dried oregano
For the topping:
1 x 400g/14oz can of chopped tomatoes
1 tbsp of tomato purée
And any other healthy delights you might want to add...we chose onion, tomatoes, mashed avocado, pesto and black olives.
Method:
1) Chop the cauliflower into chunks and blitz in a food processor until finely chopped (if you don't have a food processor you can also grate the cauliflower).
2) Microwave on high for 5-6 mins until softened.
3) Tip onto a clean tea towel and leave to cool.
4) Scrunch up the tea towel and squeeze as much of the water out as you can.
5) Transfer to a bowl and stir in the rest of the base ingredients.
6) Compress, then flatten onto a baking tray.
7) Bake in the oven at 200C/390F for 15 mins.
8) Meanwhile, heat the chopped tomatoes and tomato purée in a small sauce pan and cook gently for 8-10 minutes.
9) Remove the base from the oven, spread with tomato sauce and add any other toppings. Return to the oven for 10 mins.
10) Peel, de-stone and mash the avocado, then serve with the pizza.
