Balsamic Chicken Stir-Fry
For a quick and easy 20 minute meal that’s full of flavour, healthy and delicious, you need to try this! It’s inexpensive, and so easy to make. The balsamic sauce is sweet and tangy which really jazz’s up the chicken and veggies whilst bringing a wonderful touch to a simple recipe.
We used honey in the sauce and it really helps sweeten the recipe and adds great flavour too.

Ingredients:
3 tbsp. balsamic vinegar
2 tbsp. honey
90ml/3fl oz water
3 chicken breasts
Sprinkle of ground pepper
125g/4.5oz asparagus spears, chopped
150g/5.5oz green beans
100g/3.5oz babycorn
125g/4.5oz cherry tomatoes, chopped
150g/5.5oz carrots
Method:
1. To make the dressing - whisk together balsamic vinegar, honey and water then set aside.
2. Season the chicken with pepper, fry on a medium heat for about 6-7 mins, rotating once halfway through cooking, until chicken has cooked through.
3. Add half the dressing mixture to the pan and rotate chicken to evenly coat.
4. Transfer chicken to a large plate, leaving the sauce in the pan.
Add the asparagus, green beans, corn, tomatoes and carrots to the pan. Season with pepper to taste and cook. Stir frequently, until crisp and tender, for about 4 minutes.
5. Transfer to the plate with the chicken.
6. Add the remaining dressing mixture to the pan and cook whilst stirring constantly, until thickened, for approximately 1 minute.
7. Plate up and enjoy!
