20 Minute Turkey Couscous

This delicious 20 minute meal makes such a perfect mid-week dinner. It’s so easy to make and the best bit about it is – it’s super healthy too.

You can substitute the couscous for quinoa if you would prefer, either would taste great.

20 minute turkey couscous by MyNutriCounter
Serves 2.

Ingredients:

1/2 cup/100g couscous
1 cup/225g turkey mince
1/2 yellow pepper, finely chopped
1 tsp. oregano
3 tbsp. sweetcorn
1 tsp. paprika
2 cloves garlic, crushed
1/2 red onion, finely chopped
2 tsp. coconut amigos
1/2 cup/40g mushrooms, chopped

Method:

  1. Place the turkey mince and red onion in a pan and cook over a medium heat until the mince starts to turn white, then add in the garlic, yellow pepper, oregano, paprika and mushrooms. Leave to cook for a further 5 minutes.
  2. Add the couscous to a pan of boiling water. Bring to the boil then simmer for 5 minutes.
  3. Mix together the coconut aminos with 1 cup of cold water then add to the pan with the mince. Leave for 3-5 minutes (until the sauces starts to bubble.)
  4. Once the couscous is cooked, place it in the pan with the mince and stir until everything is well combined.
  5. Serve with fresh parsley to garnish.
