20 Minute Turkey Couscous
This delicious 20 minute meal makes such a perfect mid-week dinner. It’s so easy to make and the best bit about it is – it’s super healthy too.
You can substitute the couscous for quinoa if you would prefer, either would taste great.

Serves 2.
Ingredients:
1/2 cup/100g couscous
1 cup/225g turkey mince
1/2 yellow pepper, finely chopped
1 tsp. oregano
3 tbsp. sweetcorn
1 tsp. paprika
2 cloves garlic, crushed
1/2 red onion, finely chopped
2 tsp. coconut amigos
1/2 cup/40g mushrooms, chopped
Method:
- Place the turkey mince and red onion in a pan and cook over a medium heat until the mince starts to turn white, then add in the garlic, yellow pepper, oregano, paprika and mushrooms. Leave to cook for a further 5 minutes.
- Add the couscous to a pan of boiling water. Bring to the boil then simmer for 5 minutes.
- Mix together the coconut aminos with 1 cup of cold water then add to the pan with the mince. Leave for 3-5 minutes (until the sauces starts to bubble.)
- Once the couscous is cooked, place it in the pan with the mince and stir until everything is well combined.
- Serve with fresh parsley to garnish.
